Ester Compounds
Esters, which are the main source of many fruity and floral aroma components, have the general formula RCOOR' and are named with an -ate or -ester ending. Esters are often produced by the esterification of organic carboxylic acids (RCOOH) with alcohols (R'OH) by removing one molecule of water, which is a reversible reaction. Concentrated sulfuric acid is usually added as a dehydrating agent to obtain more ester products by removing the water molecules generated during the reaction.Ester compounds are named after their reactants, for example, methyl butyrate (CHs(CH2)COOCH3), which has an apple flavor, reacts with butyric acid and methanol, and the esterification of the two is carried out.

Ripe fruits often have a mouth-watering aromatic odor, which is actually the effect of volatile low molecular weight esters, such as: ethyl butyrate CH3 (CH2) 2COOCH2CH3 with pineapple flavor, butyl acetate CH3COO (CH2) 3CH3 and amyl acetate CH3COO (CH2) 4CH3 with banana flavor, butyl butyrate CH (CH2) 2COO (CH2) 7CH3 with orange flavor, or commonly used as an additive in topical sports gels, methyl salicylate also has an invigorating and refreshing flavor. 2COO(CH2)7CH3 with an orange flavor, or methyl salicylate, an additive commonly used in topical sports gels, has an uplifting and refreshing flavor.
Generally speaking, esters are considered the safest and most secure in aromatherapy, with the exception of Spanish sage, which contains methyl salicylate and hinoki acetate, which are generally of low toxicity. On the other hand, Holly and Birch essential oils are not recommended for use in aromatherapy because they contain more than 90% methylsalicylate.
Among essential oils and fragrances, esters have the widest range of compounds. Common esters found in essential oils include benzyl acetate, geranyl acetate, geranyl acetate and citronellyl formate.
